Australian chef Paul Bently has lived in Mexico for twelve years, has several restaurants in the country, and has just opened a taqueria in Hawaii. He visits Tulum regularly because he loves to cook by the sea at his Mi Amor and Pez restaurants.

So we trust his cosmopolitan soul and his international palate, to know his favorite corners of this paradise:

At night I like Arca. I really like what José Luis Hinostroza does. It is a very interesting food due to its acidity through fermentation and other ingredients, beyond citrus and vinegar. I like the roast pork head and the cheek was confit with the skin.
